Some great options are black rice, wild rice, brown rice, oats (i.e steel cut oats, rolled oats), organic corn, couscous, barley, rye, sorghum, quinoa, buckwheat, amaranth, and millet. Always choose organic if possible to reduce pesticide and herbicide exposure, but if organic is not possible, still eat these foods regularly because they are nutritional powerhouses.
The key is to avoid the refined, processed, simple carbohydrates found in white bread, candy, cookies, sugary cereals, cakes, and muffins. These carb sources should be clearly differentiated from the whole grain carbohydrates listed above. The reason these simple carbs should be avoided is because they lack fiber, micronutrients, and the antioxidant and anticancer properties found in whole grain foods.
The betaine compounds found in whole grains play an important role in this food group’s ability to prevent chronic disease and thus the leading causes of death in the West. These compounds improve insulin resistance and insulin secretion following a meal, which allows for more optimal metabolism of the meal.
These foods, when consumed daily, help to keep the body at a functional, healthy weight and do a great job of satisfying appetite, thus preventing overeating excess calories.
