Lo testimonia il fatto che il consumatore è sempre più informato ed esigente, conosce il mondo delle carni e lo sa apprezzare in tutte le sue sfumature. 🐃 La carne di Wagyu nel nostro settore è considerata una delle migliori al mondo per tenerezza e soprattutto sapore, grazie alla straordinaria presenza di grasso nelle fibre muscolari che conferisce alla bistecca un sapore unico. Questo grasso ha una dolcezza unica che una volta cotto dona ad ogni taglio una morbidezza imparagonabile. Durante la masticazione si sprigiona in bocca il cosiddetto aroma Wagyu-ma, Aroma di Wagyu, che lascia in bocca un retrogusto profumato, persistente e delicato che fa venire l’acquolina alla bocca. 👉🏼 Questa peculiarità è dovuta alla maggior quantità di acido oleico continuato nel grasso di Wagyu che si accumula grazie ad un periodo di allevamento fino a 36 mesi. L’acido oleico è il principale costituente dell’olio d’oliva e fra i sui benefici ci sono quelli di abbassare il colesterolo e preventive arteriosclerosi. 🥩 Il nostro Roast-beef di Wagyu proviene da Kagoshima ha una classificazione di A5 su una scala da zero a cinque ed un grado di Beef Marbling Score (marezzatura) di A11 su una scala da zero a dodici. Questa misurazione viene fatta e certificata dalla prefettura di Kagoshima tramite un esame visivo e garantisce un eccellente morbidezza è una pienezza di sapore dopo cottura. Il roast-beef, detto anche Sirlon è considerato il taglio di maggiore pregio del Wagyu giapponese, grazie alla sua consistenza fine e morbida, unita alla presenza di una gradevole copertura di grasso morbidissimo (fonde già a 25°). 🇯🇵 L’unico, l’originale giapponese, solo 和牛.
