So today I turned "vegan recipes" into "plantbased recipes" in my bio (I’d rather use no labels at all🙈😅). No, don’t worry I’m still vegan, but I’ve just had it with that term. Shredded Brussels Sprout Bacon Salad 🥗.

INGREDIENTS (Servings 6):
_ 6 cups shredded brussels sprouts (about one 12 ounce bag).
_ 1 1/2 cups grated manchego or parmesan cheese.
_ 1/2 cup toasted hazelnuts or pecans, roughly chopped.
_ 1 1/2 cups pomegranate arils.
_ 6 thick cut slices bacon, chopped.
_ 1/3 cup extra virgin olive oil.
_ 1 medium shallot, thinly sliced.
_ 2 tablespoons apple cider vinegar.
_ 1 tablespoon apple butter or fig preserves.
_ 1 tablespoon fresh thyme leaves.
_ 1 teaspoon fresh orange zest.
_ kosher salt and black pepper.
_ pinch of crushed red pepper flakes.
1. In a large salad bowl, combine the shredded brussels sprouts, cheese, hazelnuts, and pomegranate arils.
2. Cook the bacon in a large skillet over medium heat until crisp. Drain onto a paper towel. Wipe the skillet clean.
3. To make the vinaigrette. Heat the olive oil in the same skillet used to cook the bacon over high heat. When the oil shimmers, add the shallots, cook until fragrant, 2-3 minutes. Remove from the heat, let cool slightly. Add the apple cider vinegar, apple butter, thyme, and orange zest. Season with salt, pepper, and crushed red pepper flakes.
4. Pour the vinaigrette over the salad, tossing to combine. Top the salad with bacon. Serve warm or at room temperature.
Completely feel like I binged this morning but ya know what, I’ve done this to myself so now I deserve to suffer the uncomfortableness! I’ve definitely been underestimating/underrating recently and all its done is rebound on me and make me feel ravenous- I put it down to my mood being quite low at the moment, especially as I’m still injured. All I can do is allow myself these times when I feel endlessly hungry! Breakfast this morning started with this bowl of incredibly creamy cold fridgey oats full of raisins and spices with cinnamon and cardamon. Topped with the fattest yummiest blueberries that I got an entire plastic bag FULL for £1 at the market which is INSANE, as they can usually be £3 for a tiny snack packet! Topped with lots of shredded coconut hidden, crunchy buckwheat and toasted coconut granola, some hidden pb, a piece of Lindt dark chocolate from my advent. I got too cold eating this so I ate all the toppings and top half, then microwaved the rest until incredibly creamy with all the hot raisins. I then had muesli, a bite of a dead gnarly banana, more blueberries in cashew milk, then accidentally found my @frill.uk new Nutty Caramel date based icecream/frozen smoothie and started heaping teaspoons of that into my bottomless pit stomach 😂😂 it was INCREDIBLE! My husband has been sick the last few days and his one wish was chicken noddle soup. Tonight I dished up a veggie chicken noddle soup.
5 stalks of celery
4 chicken drumsticks
8 button mushrooms
Pasta is optional ————————————————————————-
Bring everything to boil and then simmer it for 45 mins until the chicken is falling off it’s bone.
Finish it off with some salt and pepper.

All you need to do is:
1 can chickpeas with the liquid
1/2 small Hokkaido pumpkin roasted until soft
Juice of 1/2 lemon
1 heaping tbsp tahini
1/2 clove fresh garlic or even better 1 clove roasted garlic
1 1/2 tsp garam masala
1 tsp baharat spice or any other middle eastern spice mix that’s hot
1/2 tsp turmeric
Salt + pepper to taste
1-2 tbsps olive oil for garnish (optional)
Purple radish sprouts
Salt, pepper, chili flakes, nigella seeds for garnish (optional)
• toss everything except the garnish in your blender and blend until creamy and smooth. Garnish with your fave toppings. Serve with bagels, crackers or veggie sticks. Yum!!
