This is the first time I've embarked on a fitness journey while simultaneously loving and appreciating my body.
The last time I focused on fitness like this I was young and though my body looked almost exactly the same as it does now, I was so disgusted with myself. At the time I whole heartedly believed that being 135lbs at 5'8 was overweight and that I just needed more discipline and I'd finally reach my goal weight of 118lbs.
I may not have had a full blown eating disorder but I think it needs to be said that having disordered eating behaviour can still be very damaging to your body and mind. I literally idolized people who had anorexia and bulemia because they represented the ideal of self discipline and will power. It's fucked up but I know I'm not the only one who has felt this way.
I now spend every day unlearning the patterns that made me believe that my life's purpose was to shrink my body. I focus on being strong and building functional strength and endurance. I appreciate my body because it didn't deserve the years of restricting, dieting, and self loathing that I put it in through.
If you've ever felt that your body is disgusting because you don't look like a supermodel, please realise that this isn't true! You've been sold an image of body perfection that is only attainable for an incredibly small number of people and completely unrealistic for the majority of us.
I know, as I worked for years to achieve a thin, model like body and was left feeling like I was a failure. Ultimately I'm glad that I had to learn this lesson the hard way because now I realize that my body is a healthy, normal size and deserves to be loved and appreciated.

These quinoa stuffed peppers were insanely good, and they brought back memories to when my Grandmom made them when I was a kid. 🌱1.5c quinoa 🌱2c veggie broth 🌱1c water
🌱2tbsp nutritional yeast 🌱1.5tsp garlic powder 🌱1.5tsp onion powder 🌱1/2tsp black pepper 🌱1/2tsp sea salt
Start by cooking the quinoa in the water and veggie broth. When thae quinoa is done pre heat the oven to 400F. Add quinoa to a large mixing bowl and add the rest of the ingredients and mix well. Stuff the peppers with the quinoa mixture and put in the oven for around 35 minutes. Enjoy!🌱👌🏻

That waist to hand ratio tho 🙌🏻 Less than a month before the photo on the left was taken, I weighed in at my heaviest, 224.6 pounds. This morning I weighed in at 126.2. How about some soup with onion, carrot, mushroom & spinach?? Some pasta was also added because...duh. Pasta is life!
Start by sautéing onion & carrot in my sauce pan with a little olive oil. When the onions become translucent I add 1 crushed garlic clove and sauté for an additional 30 seconds.
Then added in 1 cup vegetable broth, 1/2-3/4 cup water and some passata. Bring that to a boil, add pasta (around 1/2-3/4 cup) Then lower the heat to a simmer and let the pasta cook. Once the pasta is done, add a squeeze of lemon juice, spinach, salt & pepper to taste. Then plate and add some nutritional yeast!
This is super easy to make but also incredibly hearty. If you ever need to use your veggies up then I highly recommend trying this :)

Inspired by @katelouisepowell , I used the @oatly creme fraiche with mushrooms, spinach, chillies, chilli flakes, cayenne powder, onion powder, black pepper, nooch and topped with loads of parsley. So so gd

Dogs in the breeding industry suffer so much. A bitch gives constantly birth every year until her body gets exhausted with the cycle. They often get abandoned later on. The puppies also don't get adequate space & good food. The breeders only care about your money. So, please help the ones in need. #AdoptDontShop 🐶🐱❤️

I locked eyes with this beautiful soul and I felt everything - fear, confusion but most of all I felt the innocence and I saw it with my own eyes. They don't deserve this, they are not products and our 5 minute meals are not more 'complete' with their chopped up flesh. They have feelings, emotions, and they are still babies at just 6 weeks old. It is not right that we eat babies when they should be roaming free surrounded by love and peace. They shouldn't be hung upside down and then the last thing they see in their life is a blade approaching them. Choose compassion, choose love, choose Vegan 💚

Little bit obsessed with these little Soreen lunch box loaves. The banana ones are my favourite though. (Of course both vegan friendly). 🌱
Also really like the little creme chocolate bars which are accidently vegan. These ones were the raspberry ones. Think they’re 49p each. Also nut brittle which is the nicest thing. 😍
The little Tupperware box is mainly for Toby snacks when we’re out. Super handy! And like £1.99!
Quinoa flour pancakes with puffed quinoa and tahini 🥞
The ingredients I used are bio quinoa flower, bio quinoa puffs and tahini by @denotenlaer and @healthyfoodie_manon I got last week (go to my insta stories to see the beautiful ingredients I got)🌿♥️
Mix 60 grams of quinoa flower with one flat tbsp of baking powder and a teaspoon of cinnamon. For the wet ingredients add 6 grams with a tbsp of warm water and let it sit for a couple minutes. Then add the flaxegg, 1/2 cup of water, 1 tsp vanilla and 1 tbsp of maple syrup and mix it gentle (don’t overmix it!). Let it rest for 5 minutes.
Heat a pan on medium and add some (coconut) oil to it. When the mix has rest enough add small batches to the pan. Also sprinkle some quinoa puffs on top of it. Turn when the edges turn golden brown. Repeat until you have nu more mix left.
For topping I used some blueberries, cherries, tahini and more quinoa puffs ✨
Favorite Breakfast! Oatmeal with Banana, Blackberries, Raspberries, Walnuts, Flaxseed, and a Hidden Chocolate Square 😍 My tea from @paromitea finally came in so I can go back to my cup of green tea in the morning!

En este caso rellenos de pimiento rojo, zanahoria hervidas,boniato, espinacas y champiñones. La salsa lleva mantequilla de cacahuete, salsa de soja y agua (la hice a ojo).
Vegan Christmas Pudding Recipe * 125g dairy-free margarine, plus extra for greasing the bowl and paper
* 375g dried figs
* 75ml grape juice * 350g mixed sultanas and raisins
* 1 large eating apple , peeled, cored and grated
* 85g light brown soft sugar
* 85g dark brown soft sugar
* 100g breadcrumbs
* 100g self-raising flour
* ½ tbsp Method
1- Grease a 2-litre pudding bowl with dairy-free margarine, then line the base with a circle of baking parchment. Grease a large sheet of baking parchment, then lay it on top of a large sheet of foil, margarine side up. Fold a pleat in the middle of each sheet.
2- Roughly chop 125g of the figs and set aside. Put the remaining figs, the dairy-free margarine and the grape juice into a large food processor and whizz until smooth-ish, then scrape into a large mixing bowl. Tip in the chopped figs, sultanas, raisins, grated apple, sugars, breadcrumbs, flour and allspice. Stir everything together, then spoon into your pudding basin.
3- Cover with the buttered paper-foil sheet, tie with string and trim. Lower into a large saucepan, with upturned saucers or scrunched-up bits of foil in the bottom (so the pud doesn’t touch the bottom), then fill the pan with enough boiling water from the kettle to come halfway up the sides of the bowl. Cover with a lid and simmer for 3 hrs, topping up the water as needed. Remove and leave to cool. Will keep in a cool, dry cupboard for up to a year.

Senior year of college, @hesguru and I laid in bed together and watched Cowspiracy. I had been vegetarian for years, but we had never really discussed it too much. After the movie, @hesguru expressed the first seeds of understanding. It took us another year of processing and discovery, but we transitioned into a vegan lifestyle together in January 2016.
