Wild Mushroom Stroganoff Soup by @rabbitandwolves 💛 Recipe:⠀
8 oz. wild mushroom mix, sliced⠀
1 Tbsp. Olive oil⠀
2 Cloves Garlic, chopped⠀
1/2 a Sweet onion, chopped⠀
1 Tbsp. Sherry vinegar⠀
1 Tbsp. Tomato paste⠀
5 C. Vegetable broth⠀
1/2 C. Full fat coconut milk,⠀
2 C. Wide noodles, vegan⠀
Salt and Pepper to taste⠀
In a soup pot, heat the olive oil on medium high. Add the sliced mushrooms, onions and garlic. Saute until the mushrooms and onions are cooked, about 3-5 minutes. The onions should be translucent. Season with salt and pepper. ⠀
Now add the sherry, and stir to get any bits off the bottom of the pot. Then add the tomato paste. Stir into the mushrooms and onions. ⠀
Now add the veggie broth and coconut milk. Stir to combine. Taste and add a bit of salt and pepper to taste. Bring to a boil. ⠀
Now add the noodles, reduce the heat a bit and simmer until the noodles are cooked al dente. Check the package instructions for how long that will probably be according to the type of noodles you have.⠀
Taste and season as needed. Serve immediately! Enjoy!

Mashed potatoes with mushrooms by @elavegan 💛 Recipe:⠀
For the Mushroom Lentil stew:⠀
1 cup dry lentils, green or brown (190 g)⠀
1 large onion (chopped)⠀
2 cloves of garlic (minced)⠀
1 tbsp oil (for frying)⠀
3 tbsp white wine (40 ml) (optional)⠀
3 cups vegetable broth (720 ml)⠀
2 cups mushrooms sliced (135 g)⠀
2 tbsp soy sauce⠀
1 tbsp balsamic vinegar⠀
1-2 tsp each of dried parsley, thyme and oregano⠀
A splash of coconut milk canned⠀
1/2 tbsp cornstarch⠀
black pepper and chili flakes to taste⠀
Chopped pickles to taste (optional)⠀
4 medium-sized potatoes (600 g)⠀
1/4 cup coconut milk canned (60 ml)⠀
1/2 tsp nutmeg (or more/less to taste)⠀
black pepper, sea salt to taste⠀
Rinse lentils under running water. Meanwhile, chop your onion, garlic, mushrooms. Heat oil in a skillet/frying pan, stir in the diced onion, the minced garlic and fry for 3 minutes over medium heat.⠀
Add mushrooms, dried parsley, thyme, oregano, white wine (optional), balsamic vinegar, soy sauce (or tamari/coconut aminos to taste) and fry for a further 3-5 minutes.⠀
Now add the lentils and 3 cups of vegetable broth and cook on low-medium heat (add more broth if needed) until the lentils are tender (about 20 minutes).⠀
In the meantime, peel and chop potatoes, transfer them to a pot with salted water and bring to a boil. Cook on medium heat for about 15 minutes or until tender, drain. Transfer back to the pot, add coconut milk, nutmeg, black pepper and sea salt to taste and mash with a potato masher (don't use a food processor or blender).⠀
Once the lentils are tender, mix a generous splash of coconut milk and cornstarch in a small bowl and pour this mixture into the lentil stew. Cook for a further 1 minute or until the desired thickness is reached. Season again with soy sauce (if needed), black pepper, and chili flakes.⠀
Serve warm, garnish with chopped pickles and fresh herbs (optional). Enjoy!

I think it takes me longer to write up and load each of these babies on the system than doing a 4 hour class 😂😂😂 ::
I’m not great in the tech department ok!!! 😬😂 ::
Anyway maybe I will aim to create 2-4 classes per day to stop from seizing up at the desk! ::
Aside from March there will be, as there was for 2018, a minimum of 2 x Sunday 4hr classes and 2 x Thursday night 2hr classes... these are the GROUP classes.. Private or Private Group classes are by arrangement. Email me 🤙
So apologies all those who have contacted querying the lack of classes on the website! It’s been busy and I’ve been procrastinating 😂 but yup there’ll be lots of classes again... throughout the year and your vouchers last 12 months.
All classes tend to be #soyfree and #oilfree anyway... just cos 😁
2019 kicks off with #glutenfree month and will also see the inclusion of small group, kids classes for the first time and a return of the occasional speciality classes like #fructoseintolerant#lowfodmap#nutfree . ::

My interest in nutrition and fitness had started years when I was a teenager.
As a kid I was very skinny and a picky eater.
Until I turned 13.
I gained about 5 kg (12 lbs) during the summer vacation. My friends at school could hardly recognize me.
A year after, I went to the gym with a friend and was introduced to the bodybuilding.
Unfortunately, back then I wasn’t paying too much attention to what I was eating. So I was building my muscles, but wasn’t loosing fat.
Not seeing the results I was hoping for, I gave up exercising.
Years later, after having read tons of books about nutrition, and a consultation with a dietician, I got a better picture of the importance of both a balanced diet and exercising.
Taking an online personal trainer course has been the next step to a better understanding of the human body. Of course, as a vegan, I need to pay more attention to what I eat.
But, at the end of the day, it is all about keeping the balance.

Sunrise beach walks bring me joy. Quant cafes with soy milk lattes and outdoor seating for my dog bring me comfort. Seeking mindfulness everyday in these peaceful moments, my moments, before the rest of the world wakes up.
GRATITUDE ◂ The driving force behind all positivity. For the past probably 6 months or so, the very first thing I’ve been doing in the morning when I open my eyes (before getting out of bed or picking up my phone) is thinking about a few things I’m grateful for. It usually involves the people (and fur babies 🐰🐶) in my life that I love, my job, having a healthy body, etc., but some days it could even be as simple as being grateful for waking up in a warm bed, being able to take a hot shower, or getting home safe the night before. It’s such a simple habit that really just sets the day off on the most positive note. It’s impossible to not be happy when you’re in a state of appreciation. I’m already a pretty calm person but I’ve found even more so now when things come up that ppl normally would flip about, I find myself just taking a step back, putting things in perspective, and looking for whatever there is about that situation to be grateful for. Also daily meditation def has a lot to do with that too. Just thought this could be a little easy tip to incorporate to really change the trajectory of your vibration in the beginning of the day 🖤 Have a good week loves☽

Vegan Christmas wreath by ❤️ Recipe⠀
2 cups raw cashews, soaked 4 hours in filtered water⠀
1/3 cup pure maple syrup⠀
3/4 cup almond milk⠀
2 Tbsp baking blend vanilla⠀
Finely grated zest of 1 lemon⠀
1/4cup lemon juice⠀
1/3 cup coconut oil⠀
Handful of pecans⠀
2 Tbsp caco nibs⠀
Raspberry 'compote' (simply heat berries with a splash of water, and mash to form a sauce)⠀
1. Drain cashews and rinse well. Add to blender with remaining ingredients and blend on high for 1-2 mins, or until super smooth. Taste, and add more lemon if preferred. Pour mix into desired moulds (I used small, silicone half spheres, but little silicone muffin moulds would work too) and set in the freezer 4+ hours.⠀
2. Before serving, remove cakes from the freezer ad their moulds. Allow to defrost slowly in the fridge. ⠀
3. To serve, add pecans and taco nibs to food processor and pulse to forms large crumbs. Arrange crumps in a circle on desired serving platter, and then top with cakes to form a wreath. Top with coconut yoghurt, raspberry compote and fresh berries. Enjoy immediately, or store in the fridge for a few hours.⠀
A Sunday spent with friends is the best day. Checked out the @kwveganfair today and it was so fun! A great event with an awesome selection of vendors. These were my top two: pupusas from @lossalviganos and pizza from @loveamaropizzeria.

Today we went to a place of injustice. There, I heard the screams of baby cows bellowing out for their mothers. I saw dead calves rotting on the roadside. I found a discarded ear tag that was once pierced through a cow’s ear to mark her as property. And worst of all, I saw the police defending these injustices. I saw the police in riot gear defending a factory farm. I saw the sheriff’s helicopter defending torture. I am not angry. I have no hate in my heart. But I am disappointed. I am disappointed in our legal system. I am disappointed in the officers who stood on the side of injustice. But I am so proud of my fellow activists. I am so proud of people like my friend, @dxepriya, who are risking their freedom to defend what’s just. If the police won’t stand for what’s right, then we will. 🌹
