Toasting to Tuesday with one of my ultimate favourite quick lunches- CHICKPEA MASH ✨ This easy recipe has gotten me through MANY busy stages of life and I still come back to it because it’s so delicious 🌿 There’s so many variations of this online, but this is my favourite way to make it- I’ve adapted it from @ohsheglows ! 🙌🏼.
To make 👇🏼:
Drain and rinse 1 can of chickpeas. In a large bowl, mash with a potato masher or back of fork until mostly mashed. Mix in 4 stalks of diced celery, 1/2 diced red pepper, 1/4 diced red onion, the juice of 1/2 lemon, 1 tbsp vegan mayo, 1/2 tbsp mustard, 1 tbsp relish, 1 tsp garlic powder + 1/2 tsp black pepper. Mix to combine, then serve on your favourite toast, with crackers or as a salad topper! 💛

Lentil Soup with Maitake and Enoki Mushrooms
I made a simple lentil soup with a bit of Thai red pepper in our Instant Pot. Then I sautéed miniature mushrooms in avocado oil and tamari. The earthy quality of lentils and mushrooms, the salty umami of the tamari, the heat of the peppers, and the tang of a squeeze of lime on top, all harmonized together beautifully.

❤️❤️😍😍😍Utterly adorable!! What a wonderful set of photos by @nessytoafrica! These were taken in the north of Kruger near Punda Maria and its always a brilliant sight to see elephant calves playing! Of course the famous elephant trunk is one of nature’s great marvels. Operating as a fifth limb, the trunk consists of over 150,000 muscle fascicles - bundles of muscle tissue that give a moveable rigidity and provide considerable dexterity to the appendage. This allows the elephant to use the trunk for eating, drinking, touch and even as a snorkel when underwater, in addition to more traditional nasal skills such as olfaction (smelling) and making noise. The mix of power and skill an elephant is able to exhibit with its trunk is incredible - the trunk is powerful enough to tear large branches from trees while being skilled and subtle enough to crack open a peanut without damaging the nut inside!

i had a major craving for oats with pumpkin spice cinnamon apples, so here it is! i used gf sprouted @onedegreeorganics oats & cooked them in water and @malkorganics almond milk. the organic apple slices were sautéed in coconut oil + slightly steamed and then I added @frontiercoop pumpkin spice and ceylon cinnamon. oh, and then there’s the thick drizzle of PB 👀
Muy buenas gente!! Ya hacía mucho que no me pasaba por aquí y era hora de solucionarlo.
Así que ¿qué mejor forma que de la mano de un plato con curry perfecto para el invierno?
Tengo que confesar que soy totalmente adicta a esta receta. La hago de mil formas, variando con garbanzos, en olla, al horno, usando caldo, leche de almendras, o solo leche de coco... Depende del día y de cómo me dé 🤔
Por raro que parezca, la base de esta receta es de un gazpacho de coco y jengibre (el favorito de mi tía por cierto), que si lleváis mucho por aquí ya me lo habréis visto, y sino, lo tenéis en fotos anteriores (seguramente por la época del veranito ☀)
Allá vamos con la receta.
✔️1 tsp colmada de curry
✔️ 1/4 tsp comino
✔️ 1/4 tsp anís estrellado
✔️ 1/2 tsp de sal
✔️ 200 ml leche de coco de lata
✔️ Un trozo jengibre (yo pongo algo así como el grosor de un dedo. Depende de lo que te guste el jengibre)
✔️ 1 diente ajo negro
✔️ Un tomate maduro
✔️ 100g lentejas rojas pesadas en seco.
✔️ 1 zanahoria
✔️ Un trozo calabaza
1️⃣ Trituramos el curry, comino, anís, sal, leche de coco, jengibre, ajo negro y el tomate juntos.
2️⃣ Probamos y vemos si queremos añadir más curry, jengibre, sal...
3️⃣ Añadimos la mezcla a una olla junto con la zanahoria y la calabaza cortada en trocitos, y las lentejas.
4️⃣ Tapamos y dejamos hacer a fuego muuuuy lento unos 20-30 min, removiendo de vez en cuando para que no se nos pegue (que las lentejas rojas son muy de pegarse al fondo, al menos a mí 😅, aunque he de decir que lo pegaito me encanta y siempre acabo rascandolo para comermelo sin más antes de lavar la olla. Así lavais menos 💃🏼)
⚠️ Si lo veis corto de líquido, siempre podéis añadir más leche de coco o incluso leche de almendras (sin azúcares añadidos parfava ☝🏻)
Salen, para mi gusto, o una ración muuuy apañá, o una ración + otra más pequeña a la que podéis añadir arroz para que no se quede en poco.

💡PD. Si no tenéis lentejas rojas y queréis usar lentejas normales, añadir el doble de todo menos de lentejas, porque tendréis que tenerlas más tiempo al fuego reduciendo.

one of the most underrated restaurants for vegan eats... @redrobinburgers 🙌🏾 it’s always tricky finding places to eat with family & friends because a lot of times i’m left with very few options. a few tips for this issue: @happycow app is a lifesaver for finding veg options in any city, be willing to get creative and make a meal out of sides (baked potato & a couple orders of veggies is a go to for me), don’t be afraid to ask for substitutions (yes i’m THAT customer) and always preview menus ahead of time. often i’ll end up just eating before or after going out with friends that way i still get the social aspect but i’m also fueling my body with a full meal rather than being stuck with 5 leafs of iceberg & 2 cherry tomatoes (also saves money). i’ve found red robin to be a crowd pleaser where everyone can find something they love... YUMMMM
the dEATs: i order their vegan meal but swap out the tomatoes for grilled pineapple, so it’s a vegan patty with red onion & fresh avocado in a lettuce wrap with bottomless broccoli babyyyy 🥦

Can’t decide if this looks really nice or really gross but it tasted good so that’s all that matters 🤷🏻♀️ For lunch today I knocked up a creamy pasta sauce using half a butternut squash (leftover from the dhal I made on Monday), garlic, lemon, lots of nutritional yeast, a splash of apple cider vinegar, almond milk, a tiny bit of miso paste for umami goodness, chilli flakes and salt and pepper 🙌🏻 I also chucked in some peas for added goodness and served it with pasta shells to satisfy my inner child 🙊
I will forever be an oatmeal girl. you know why oats are GREAT for trading and building muscle? (don’t forget to give this a like if u love oatmeal or comment of you don’t 🤪) WELL:
🌱it’s a excellent source of complex carbohydrates that will push you through your heavy lifting and fuel you cardio if you are implementing such exercise into your plan
🌱 per dry cup, it has 11 GRAMS of PROTEIN! Not that protein is such a big deal, but if you are looking to build muscle then it definitely helps to increase your consumption by a bit. Oatmeal definitely helps with that.
🌱 a dry cup also contains 3.4 mg of iron which helps to transfer oxygen into the bloodstream and then into the muscles so that they can work/train more efficiently and not get fatigued as fast.
🌱 this is not a direct muscle building benefit but they contain a TON of fiber (1 cup dry has around 8 grams!!) which will keep you healthy by preventing heart disease so you won’t get chronic disease and can lift more weights and get 👏🏻 shredded 👏🏻
