Drooling over these quick 5 mins Tahini Coconut Cups😋 they require just 4 ingredients 🙌 and full of flavour 😋 and packed with nutrients💪 and for topping we used our Chocolate Coconut Chips😋
btw if you have problems with iron deficiency, try to eat at least one tbsp of tahini every day, it’s also high in a group of vitamin B which means it helps to better absorption of B12 supplements. Not to mention protein🤪~

Whip up together tahini paste, coconut cream, coconut butter, the ratio is 1:1:1. You can add date syrup to your taste if needed or any other sweetener. Fill a silicon mould with the mixture and freeze 🥶 it for 2 hours. Ready to enjoy 😊😋

MINT TEA 🌿
Mint is one of the hardiest and simplest herbs to grow, I say this from experience as a human that was not blessed with a green thumb 👩🏼🌾 Mint is often the term used to cover varieties including spearmint, apple mint, pineapple mint, peppermint and others. However, it is the menthol in peppermint that has shown to have the medicinal properties 🌱
Fresh peppermint tea has many digestive benefits including reducing bloating, cramps and flatulence with positive results seen in Irritable Bowel Syndrome (IBS). Menthol relaxes muscles and has shown benefits in anxiety and stress in addition to have antimicrobial properties. Antimicrobials have the power to fight against bacteria and fungi 👾
Making your own tea 🍵
Boil water in a saucepan, add a handful of torn fresh mint leaves, boil for a few minutes. Turn the heat off and let the mint soak then strain into a cup. Enjoy a cup before bed tonight 🌱💤 **please note this recommendation is for the fresh plant and not ingesting peppermint oil.
KISS MY KVASS 🍏🍋
I am obsessed with kvass. It is probiotic, sugar free, it cleanses the blood, it’s full of minerals AND it’s a great hangover cure (the liver loves it!) Best of all it is super super easy to make. This one is with beets, apple, lemons ginger and some spices. Wanna know how? 👇🏼👇🏼
1. Cut about 5 small beets, 2 apples and 1/2 a lemon into big chunks. Keep the skins on.
2. Fill a big jar (2-3L is great) with filtered water - must be filtered to remove tap water chemicals
3. Throw in spices. I’ve used fresh ginger, bay leaves, coriander seeds, jumpier berries and allspice berries.
4. Add a pinch of salt
5. Cover and wait 5 days
6. Strain the fruit out and chill

Putting the garden slowly to bed here in Williams (Cow Creek Umpqua & Takelma territory) while dreaming about the land in New Mexico (Zuni, Hopi, and Navajo territory).
These onions were growing a little too close for comfort so I pulled them up and spread them out. I think they’re cozier now.
Sprayed the beds and the hugelkulture with KNF soil maintenance solution just for good measure since my IMOs didn’t take.

Buddah/nourish bowls are my favourite! No two are the same, but they all taste amazing 👌🏼 this ones freekah, asparagus, roasted pumpkin, broccoli, masala chickpeas, roasted carrot, avocado and spicy peanut sauce 🌿
I introduced my Ma to @shifteatery and she loooved her mushroom toastie 🍄 And of course I went with an acai 🌈 It is so cool to see so many all vegan places popping up locally! ✌️

@fspuntamita definitely surprised us with how many vegan options they had.
Here I’m chowing down on their veggie roll for lunch which came with a sweet and tangy Asian sauce. It was so good, we ordered another one. 🌝
Because of my Vata-predominant body type, I stay away from excessive amounts of raw foods but this was perfect after a jam packed day of eating the day before.

took this angel in where I visit him each week. It’s a peace of heaven on earth. For their annual fundraiser this year they asked me if I would do a vegan table. I’m not a caterer (the event was being catered) but it was fun and I enjoyed that the guests got to see and experience how delicious vegan food is. There were just under 400 people who attended and not only did most everyone come eat something from the vegan table but I was overcome by the compliments for the vegan food 🌱
The fundraiser was a huge success in every way!!. I served :
Mushroom and spinach ravioli with bruschetta sauce
Orzo with capers
Cream cheese pinwheels with fresh basil, garlic and SunDried tomatoes
Capellini pasta done in a lemon garlic, butter sauce with shiitake mushrooms and toasted walnuts
Assorted cheeses - they were so popular - piped on crackers and wheels and cubes of cheese
Focaccia bread; baguettes, assorted crackers, breadsticks
Roasted white, yellow and purple cauliflower
Roasted green and purple asparagus
Steamed white asparagus with garlic mayo
Roasted carrots with parsley
Assorted fruits and vegetables

Cheesy peasy pasta
I was craving comfort food as I prepare for finals this week so I threw this dish together
To make the sauce I sautéed garlic, then added mashed up delicata squash and sweet potato. Then I added some Dijon mustard, lemon juice, onion powder, nutmeg, turmeric, black pepper, and old bay. Next I dumped in a bunch of nutritional yeast and almond milk until the sauce reached my desired consistency
Thanks to @bethany_mosher for sending me this cool hemp pasta to try. It tastes delicious like normal pasta, but the pasta in this picture has 72g of protein!
I encourage all my clients to eat more vegetables as there is good evidence for their role in reducing health risks. Plant food not only has vitamins and minerals but also thousands of phytonutrients made by plants to protect themselves but which also protect us. This shepherds pie has 9 veg and was also served with broccoli and red cabbage making 11 in total. I added onion, garlic, tomatoes, courgette, mushrooms, carrots, peas and sweetcorn to minced beef (so it was half meat and half veg) and topped with sweet potato. It was really yummy. #eatmoreveggies
Miso noodle soup with fried tofu and a bit of grilled miso eggplant 🍆 what's on your menu?
Completely make up 😂 but tastes delicious! Just make sure you use white miso paste for this one. It's not as intense, I find.
