After we recently went to @littlebigdiner, we decided to try making ramen ourselves. I found a highly rated recipe for pork bone broth that took 12 hours at a rolling boil and a separate recipe for tare to flavor it. Because it asked for so much love ( we needed the WHOLE day ), we expected it to be the best thing we'll ever make. It wasn't. It was fine. Maybe because we were in a rush to get it in our mouths since we had literally gotten up at the crack of dawn to start blanching bones, we forgot to add the meat and stir the tare into the broth. We just let it sit at the bottom so the first half of the meal was kinda bland and the second half was kinda salty. Upside is we made enough broth and tare for a second batch so hopefully it comes out better. Also it was our first attempt at making a medium boiled egg and it came out great!
Damned good day for ramen! Bit of a mixed bag. Supposedly, this was spicy miso, but there was nothing remotely spicy about it. Regardless, it was mad delicious! Very thick and heart. Almost like tonkotsu, and the charsu was soft as butter! #soup#noodles#miso#bushwickfood#fucktrump
#JamieOliver#5ingredients Seared sesame tuna. Ok. Everyone loved this one. My pocket book didn’t like it though because each (frozen) tuna steak cost about $6. If I could source tuna steaks for half of that, I’d be all for this meal. All in, not including some of the ingredients I already had, this was like a $30+ meal for four. Tonkatsu Black Ramen and Miso Ramen || Delicious ramen! The soup was full of flavour, but not so much that it was overwhelming salty. the noodles had a very nice chew to them and the pork was tender and decadent with just the right amount of fat @wakadoramen
Pesto de cevada combinado com quatro redutores . O Pesto desta vez foi preparado com muito carinho e amor juntando cerca de 4 colheres de sopa de sementes de girassol moídas, 1 col sobremesa de chlorella, 1 col sobremesa de spirulina , 1 col sobremesa de erva de trigo, dose extra de pimenta de Caiena, tomilho fresco, azeite virgem e 2 col sobremesa de Miso de cevada . Ficou assim com sabor intenso. Como redutores de sabor formei quatro folhas em que cada pétala era um destes mimos : pão de centeio torrado, laminado e cortado aos quadrados . Pão de nozes e passas com centeio cortado de igual forma. Pão de malte torrado e cortado em quadrados também. 2 ovos mexidos em azeite , flor de sal e orégãos secos.
Tudo regado com azeite virgem antes de servir . Atrevo me a dizer que estava uma entrada que se não houvesse prato principal já ficava mais que bem tal o conteúdo nutricional deste prato.

Honey- Miso Glazed Salmon experiment was a success!
I'm in the process of trying out new recipes to use the combos of salty, black foods, warming foods, and bitter to support the water elements. The salmon recipe got three out of the four.
For the glaze:
2T yellow/brown miso paste
2 T sesame oil
1 T mirin or water to thin
1 tsp honey
1 tsp grated, fresh ginger
Whisk together and brush over salmon fillets. Sprinkle with black sesame seeds.
Bake at 400 for 12-15 minutes, until the thickest part of the salmon is cooked through. Allow to rest for 5 minutes before serving.
Serve with your favorite veggies for a complete meal.
Last day of @we_are_food#7dayreset and I made the Broccoli and butter bean salad with miso dressing for lunch and the miso and soba noodle soup for dinner. The salad was as lovely as ever but the miso soup base was sadly bland - too much water I think. Still, overall I really liked the reset, it really did reset my relationship with vegetables and it was nice not to have think about what was for dinner. Poached miso salmon 🍲🐟
One of the tastiest dishes I've made, like ever. Or perhaps I was just hungry 😅
Miso broth with fresh ginger, chili and lime. Poached the salmon in the broth for 7-8 minutes. Added sprouting broccoli, black cabbage and shiitake mushrooms. Served with some sunflower sprouts. 😋👊🔥
