Servings 4 Ingredients 2 lbs sirloin steak cut into small 1'' cubes 1 tablespoon oil of choice 2 tablespoons butter 3-4 garlic cloves minced or crushed salt and pepper to taste Instructions Heat oil in a large heavy-duty skillet or cast iron pan for at least 1 minute. Generously season the steak with salt and pepper. Place the steak in the pan in a single layer without overcrowding the pan (work in batches if needed). Cook for 2 minutes per side or until seared and dark brown. Remove the steak from the pan and add the butter and garlic to the pan. Stir for 30 seconds or until the garlic is light brown. Turn off heat and return the steak to the pan. Stir until the steak is fully coated with the butter garlic mixture.   • Weight Loss vs Weight Gain with Turkey Sloppy Joe Bowls with Jalapeño Cheddar Potatoes from Page 65 of The Meal Prep Manual-60 Minute Meals. . . Here is one of my go to’s from Book number 3. The meat is super flavorful and when you eat each bite of broccoli with a bite of meat you can even mask the flavor of the broccoli 😎 This meat mixture is a perfect example of something that would freeze well. Foods that are coated in a sauce or soups/stews tend to freeze and reheat better than others. If you wanted to make a gigantic batch of this sloppy joe meat to freeze, it would be a good candidate. . . To make the dish more weight loss friendly you could lessen the amount of meat and potatoes in the meal while increasing the serving of broccoli. When I usually cook potatoes, I coat them in olive oil to get proper browning and crispiness. One way to save calories is to omit the oil and opt for a cooking spray on the pan only to prevent sticking. You could also cut back on the cheese used on top of the potatoes. It’s all about calorie balance, if you would prefer a larger serving of the meat/potatoes you can compensate by reducing the other item. . . On the weight gain side is a slightly larger portion of meat and instead of lean turkey it is 85/15 ground beef. The extra fat in the meat is an easy way to increase calories without adding volume. More potatoes is also a great way to add calories. Too many people are afraid of eating regular potatoes. Potatoes are fine to eat when you prepare them yourselves. People associate potatoes with fast food French Fries and that is comparing apples to oranges in my opinion.   • 🥘 Homemade chicken stock in my very FIRST pot of homemade chicken noodle soup this evening!! . 👍🏼 One key component to simple winter dishes is broth. Homemade broth (a.k.a. bone broth) is different from the stock you generally buy in the store. Bones contain massive amounts of good-for-you fats. Good fats help to protect the nervous system, seal and heal the gut, and strengthen the immune system. . The next time you buy a bone-in piece of organic, hormone-free meat, save those bones. Put the bones (and skin, if there is any left) into a pot, and fill with a few inches of water. Add salt and pepper, a bay leaf, and if you like, a bit of apple cider vinegar, which will help to further break down the bones. Simmer up to 48 hours, or at least until the broth is no longer clear (a few hours). Season to taste, cool, and strain out the remains. . Homemade broth is FULL of flavor and also freezes well. This recipe is definitely a keeper in this house. The chicken is seasoned with no salt seasoning from @costco The key to salad is changing it up so I don’t get bored. I’ve been alternating between these @bolthousefarms dressings and I love them ! I looked up some recipes, but ended up just throwing veggies in a pot with cooked ground lamb, bone broth and leftover frozen tomato sauce. In all, this warming stew has tomatoes, butternut squash, carrots, zucchini and pumpkin 👍🏽🥕🍅 perfect for getting my veggies when salads and smoothies aren’t comforting enough ☺️

What you don't see is the full meals I've been eating all week. . . . Breakfast 1/3 cup steel cut oats, palm size turkey breakfast sausage, cup of raw spinach . . . Lunch Plain shredded chicken, banana peppers, some left over cheese, spinach salads with lemon dressing. A side would be Jasmine rice or left over Mac and cheese . . . Dinner Veggie patties with guac on top, or a fish fillet with a side of rice, or left over Mac and green beans. . . . Extra Protein shake post work outs Tons of water, sometimes with Mio, sometimes without. 🤷🏼‍♀️

Missed my partner on this one, but I still pushed through and got my sweat on! .. If you see my posts and think “man I wish I had the motivation to work out” or “I wish I had the time and will power to meal prep”.... listen to me as I yell this from the mountain top!!!! 🗣I don’t always have excitement and motivation to work out. But I make the decision to honor my body with movement each day because it is what our body NEEDS. I also do it because there are so many people out there that physically can’t and wish they even had the option to get their sweat on! .. Yes it takes a little extra time to meal prep and a little extra planning... but man does it help my week go so much smoother. No guessing games and spending extra money on foods that really aren’t serving my body anyway! Less stress, less decision making and saving money... that speaks to me!! Lol .. By sharing my story-the good, bad, and ugly... I hope to inspire others to find that fight inside themselves too!   • {NEW} One-Sheet Pan Tomato Pesto Salmon 🍅🌱 This salmon recipe is super FAST to put together and even quicker for the clean-up-duty person, thanks to our one-sheet pan method. We love serving this salmon for dinner, but it's equally great for prepping ahead a few lunches to take with you as your meal prep throughout the week. Feel free to double, triple, or quadruple this recipe to fit your family size...it turns out GREAT! makes 2 servings Ingredients: 2, 6 oz skin-on salmon fillets 2 cups frozen, or fresh organic peas 3 cups fresh cherry or grape tomatoes 2 fresh garlic cloves, minced 2 tsps avocado oil, or olive oil sea salt and fresh ground black pepper, to taste 1 Tbsp delicious fresh homemade pesto (recipe at bottom) Instructions: Preheat oven to 450 degrees f. and line a large baking sheet with parchment paper. On the prepared baking sheet, arrange peas and cherry tomatoes evenly. Add garlic, drizzle with oil and sprinkle with sea salt and pepper. Toss peas and tomatoes gently to get them coated then make space in the middle for your salmon. Lay your salmon in between, skin side down, lightly salt & pepper, then spread fresh pesto on top of the fish. Roast in your preheated oven for 12-14 minutes, until flaky. Serve while hot, or allow to cool, then equally divide servings into sealed containers. Keep refrigerated in air tight glass containers for up to 3 days. Delicious Fresh Homemade Pesto 🌱 Ingredients: 1 cup (packed) fresh basil leaves (no stems) 1 Tbsp  pine nuts  1-2 large cloves garlic 1/4 cup extra-virgin olive oil 1/4 cup freshly grated parmesan cheese Combine basil, pine nuts and garlic in a food processor, or high speed blender and pulse until very well blended. With your machine running slowly drizzle in the oil and process until smooth. Add the cheese and process just long enough to combine. Store any leftover pesto in the fridge for up to 10 days. ❤Rachel

  • If you think I’m going to sleep on game-day food just because I’m doing @whole30 - you are dead wrong, thank you VERY much. In addition to the soul healing chicken wings @bmaupin34 smoked last weekend, I just had, had HAD to have buffalo chicken dip 🤤 You can currently find me licking the dishes clean 👇🏻 ⁣ ⁣ ⁣ I combined: ⁣ 1. Half of a large baked spaghetti squash (prick it a few times with a fork and nuke it in the microwave for about 3 mins before cutting in half, then scoop the seeds and bake it face down on a cookie sheet with parchment paper for about 35 mins at 400 degrees and then scrape, scrape, scrape those sweet noods out) ⁣ 2. Two cups of shredded chicken and veg (I did chicken thighs in the crockpot on high for 4.5 hours with some house seasoning I have, a little water, a quarter cup of @franksredhot - can I get an AMEN 🙏🏻 that it is compliant - and a simple veggie mirepoix). I barely had to touch it to get it shredded perfectly. ⁣ 3. A quarter cup of @primalkitchenfoods garlic aioli and another quarter cup of Franks⁣ 4. Fold in 4 beaten eggs to the above mixture and bake at 350 degrees for about 40-45 mins⁣ 5. Serve with all the veggies and all the crackers (if you are able), or just eat it by the spoonful, whatever.⁣ 6. Next time I make this I am adding crumbled Cheez-Itz to the top 😎 #eats #whole30 #indygrammers #buffalochicken #hangry #mealprep

  • Creamy Zucchini + Potato Soup🌱 ➡️QUESTION: Are you still LOVING all the soups I've been sharing lately?! Or are you just completely over soup? Like, all souped out?!! 😂 Let me know because I really do listen to you, and try to create recipes you'll use a lot! 🙏🍜💖 { Sooo creamy and delicious! A brand NEW favorite wintertime soup! } makes 4 servings Ingredients: 1 Tbsp clarified butter or ghee, coconut oil, avocado oil, or olive oil  2 fresh garlic cloves, minced  1 large yellow onion, diced 3 stalks crisp celery, sliced 2 medium zucchini, chopped 2 medium potatoes, peeled and thinly sliced 4 cups low sodium chicken broth, or broth/stock of choice Garnish/finishing ideas: 2-4 strips of nitrate free bacon, cooked and crumbled (optional!). 1 cup plain Greek yogurt, unsweetened coconut milk, OR grassfed cream 1/4 cup shredded parmesan, to garnish sea salt and fresh ground black pepper, to taste Instructions: Melt butter/ghee in a medium pot over medium high heat.  Add garlic, onions, and celery, then sauté for 3-4 minutes until veggies begin to soften. Add zucchini, potatoes, broth and bring to a boil. Once boiling, cover and reduce the heat to a low simmer. Cook for 20 minutes or until veggies are fork tender. Taste and season with sea salt and fresh ground black pepper to your taste. Using an emersion blender, blend until smooth and creamy, then stir in the plain Greek yogurt.
