KETO SPINACH ARTICHOKE DIP
Here is a delicious recipe for Keto Spinach Artichoke Dip by @ruledme
This makes 20 servings of Spinach Artichoke Dip. Each serving comes out to be 231 Calories, 19g Fats, 12g Protein, 2.6g Net Carbs
½ cup chicken broth
8 ounces cream cheese
10 ounce box frozen spinach
14 ounce can artichoke hearts, drained and chopped
½ cup sour cream
½ cup mayo
3 cloves garlic
1 teaspoon onion powder
12 ounces shredded Parmesan cheese
12 ounces shredded Swiss cheese
1. Place all of the ingredients, except for the Parmesan and Swiss cheeses, into the Instant Pot.
2. Seal the lid and make sure that the vent is also sealed. Set it to pressure cooker, and set the timer for four minutes.
3. Once the timer is up, perform a manual release.
4. Add the cheeses into the instant pot and stir until everything is melted and gooey.
5. Serve right away with something for dipping, like pork rinds.

Weigh In Wednesday: Happy to say I’m down 7.8 Pounds... to be honest I haven’t went as hard as I should have this week. This number could have been easily double this. I know how my body responds to keto especially in the first few weeks restarting and going hard- looking for double digits next week...
This meal right here made my lunch! I was a happy man when I made it because surprisingly, I added sourcream and salsa on my burger. It was so good... I am going to make one tomorrow.
Juicy oven roasted chicken idea🙌
DIY Bbq seasoning 🧂
• Whole Chicken
•3 scotch bonnet chilies
•4 garlic cloves
•1 tablespoon thyme
•1 tablespoon allspice
•1/2 tablespoon nutmeg
•1/2 tablespoon ginger powder
•1/2 tablespoon of erythritol(1 tsp blackstrap molasses or 1/2 Tbls brown sugar substitute
•1 lime juiced
•100 ml white vinegar
•1 tablespoon olive oil
•Salt & pepper to taste
-Cover and marinate for 2 hrs
-Bake covered for 45 mins at 400°

Lunch: Salad with a burger patty & Chipotle. 🤩
Lunch box: bacon wrapped chicken with mushrooms, peppers and some cauliflower mash, @ghughessugarfree bbq sauce on the side, celery with laughing cow cheese, strawberries with a piece of chocolate fudge fat bomb & jello fluff. Iced coffee with collagen, raspberry tea and sobe. 😍

Tonight’s Dinner: Buffalo Grilled Chicken Salad with Ranch and some shredded cheese
This is honestly a new go to dinner for me to make. A friend I had dinner with tonight was craving buffalo chicken nachos. I couldn’t eat the nachos (obviously) so I decided to put the chicken on top of mixed greens instead. I bought a couple of chicken breasts and cooked them in some olive oil. After the chicken was cooked, I shredded the chicken and added in Frank’s Red Hot Wings Buffalo sauce (no carbs). I let it simmer a few minutes and then it was ready to eat. This meal was easy to make and was really filling. Let me know your thoughts when you make it. ☺️
#ketokid take 1. Cooking more is one of my resolutions this year. Plus, many people have talked about the health benefits of going on the ketogenic diet so I thought I'd give it a shot. Running 15 races last year gave me an excuse to eat and drink whatever I wanted. Can't do that this year 😂. I'll post ingredients I use for each dish. Note, not the actual recipe, I am not a good cook 🤣. ZOODLECINI ALFREDO
1. Zucchini noodles
2. Pineland Farms meatballs
6. Rao's Roasted Garlic Alfredo Sauce
7. Shredded parmesan cheese
8. Pepper (to taste)
On tonight episode of #littleladykitchen - Orange & Macadamia Crusted Salmon and Coconut Mashed Cauliflower 😋😍
I have to say that Macadamia nuts aren’t usually my favorite ingredient but I really liked this combo! The fresh orange juice and fresh orange flesh garnish really brightened and lightened things up. .
Here’s how we prepped it...
.1) Preheat oven to 375. Place salmon on oiled, aluminum lined baking tray.
2) Supreme 2 oranges and cut the meat out from between membranes. Set the meat aside for serving with cooked fish. (Try to keep your little helpers from eating all of it! 😉) Squeeze and juice the remaining orange flesh over the fish.
3) Drizzle fish with olive oil and sprinkle with seasoned salt, herb mix or salt pepper and garlic powder. Sprinkle 1/3 cup of crushed macadamia nuts over top.
4) Bake at 375 until just firm and flaky. Serve with raw orange slices and enjoy!
Side note - when I was mashing the steamed cauliflower with my immersion blender I realized that it has been going strong since my late sister Lizzie gave it to me over 14 years ago. #allthefeels 💗
