#transformationtuesday I often think a lot about the transformation my body is going through. You hear me frequently refer to myself as two different people. But the truth is, I am still the same woman I was when I stood in front of that mirror on the left. Today, I’m a little lighter, and a little older but so much more certain of the woman I am... the woman I’ve always been. I’ve let the negative thoughts slip away and silenced my self doubt... and I can now hear that voice inside of me that showers me with unconditional love. I can be confident that if nobody else in this world understands me or relates to me... I will still never be alone. Because I know lonely. I know what it feels like when even your inner most thoughts are against you... waging war on every dream you could ever hold. And that’s who I transformed... that’s who I defeated. Not the woman I was... but the hatred I had for my own body that kept me from really knowing her. So don’t change who you are... January 2017 ➡️ July 2018 ➡️ January 2019 | I want to keep it honest here. I was on strict keto from the beginning of January 2018 until October 2018 and went to the gym about 4-5x a week. And then I went on a 3 week honeymoon and ate whatever I wanted, and the holidays came and went where I also ate off plan. Also I haven’t been to the gym in almost 3 months. I don’t think I complete went back to the start, but I definitely had a set back. I’m determined to get back to my summer weight and look. Realistically I’m only about 5lbs away, but because I’m super bloated from eating high carbs for a couple of weeks... it really shows.
I really like being on keto because it’s easy and simple, but I it was also nice to celebrate the holidays and my marriage without restricting myself. I’m about 5lbs down from my starting weight at the beginning of the month, but it’s been hard to stay motivated on the weekends. But I just started my gym routine again and I’m determined to stick with it. #letsdothis

Today’s food post is very different from what I have ever written.
Usually when there is something on my mind, I take to writing. It helps me to clear my mind, organize my thoughts and process the information I have received. This morning, I learned a student of mine passed away. While I did not know them for a long, the short time I was honored to have with them, left a very profound impact on my life.
In my past life, as it were, I used to turn to food for comfort in an unhealthy way. Since I was a child, I would stress eat and then feel guilty afterwards; but yet comforted. I did not know how else to ease the pain before Yoga came into my life. Now, I have learned to take the time I need to process my thoughts and feelings. I have learned to let things roll around in my head, until I have a clearer picture of what I am thinking and feeling. Emotions are tricky. We do not often now how to feel or how to react in the moment. So, I have learned it is OK to let people know you need space and time. They will understand. This is not just MY lesson to share.
I was out getting groceries and running errands today after class. I ended up at a few different grocery stores. I have set a challenge for myself this year with the advice of a dear friend to remove dairy from my diet. I can finally have coffee with no sugar! That took 3 years! I am trying to eat cleaner, sticking to mostly protein, veggies and fruit. Eating foods in whole form is always a good choice. While I do love a good protein shake, I prefer to eat meals when I can. That is the forever foodie in me. :) When I shop at the grocery store I often notice how it seems like I get shower thoughts. I think of all the wonderful meals I can cook with these ingredients that I see and then I get home and totally forget what I wanted to make, because I am SO HUNGRY! I am sure we are all guilty of this at one point or another.
Part of this challenge I set for myself is to be more mindful in my eating. See, it’s not only about what you eat and what you are putting into the body, it is about HOW you are eating.

Can you tell I was feelin myself after the gym today? 😂👌 idk what’s going to happen if I hit my transformer dietbet goal. I might not have that belly bump anymore and then I’m not going to know how to dress myself because literally all of my clothes are bought with concealing that in mind. Short shirts? Nope. Tight shirts? Def not. High wasted jeans? Always. We’ll cross that bridge later, for now, I’m liking the progress. •
Better swaps make enjoying the foods that you love that much more lovable. .
This mac & cheese gets an overhaul with Chickpea pasta, collard green pesto and just a little shaving of Parmigiano Reggiano on top and the use of veggie stock to cut down on oil. Flavor is on point! The addition of the collard greens and lemon makes the flavor profile of this dish so much more interesting.

Collard greens pesto
1 Cup, packed, collard greens, trimmed and chopped
1/2 Cup, packed fresh basil, stems removed
1/2 Cup grated pecorino romano cheese
Juice from 1/2 fresh lemon
Teaspoon grated zest
1/4 C EVOO
1/2 C low sodium veggie broth
2 cloves fresh garlic, peeled and roughly chopped
1 teaspoon Himalayan pink salt
1/2 teaspoon freshly ground black pepper
1) Wash all vegetables and herbs with Eat Cleaner® Triple Action Fruit + Veggie Wash.
2) In a food processor, add collard greens, basil, cheese, lemon and olive oil; pulse all of the ingredients together. Add vegetable stock, herbs, garlic and seasonings; adjust to taste. Double the batch and freeze for a rainy day.
Starting out 2019 with Ketogenic Diet. Do I know what I am doing? No. Am I excited to figure it out yes. The holidays are over and I needed to make a change. We have the meats... in my best Arbys commercial deep voice.

I never imagined when I weighed 174 I would experience the same feelings toward my body at 123.
The shock when I sit down or bend over and see this tummy still holding on for dear life.
But wait...this tummy HELD life. 3 beautiful little girls made their home here. A total of 27 months was spent stretching and growing this space!
I have so much healing that needs to happen when it comes to body positivity, self love, acceptance. I’m doing that for my girls so they grow up loving every inch of themselves and never question its existence...
