Dish #10 proved to be interesting since Mexico’s National dish is a sauce, and not a meal! So I chose a recipe for chicken enchiladas with mole sauce. I’d never had mole before, so I honestly had no clue what it was supposed to taste like! My lovely sis in law @sarahsimmonsss helped make it and said it tasted right, though. If you didn’t know, Gut health and the gut microbiome is a trending topic and rightfully so. There is a lot of new and upcoming research that are showing how the gut can positively affect many aspects of our health. 🦠 🧫
Thankfully, supporting a healthy gut doesn’t need to be complicated and expensive. Let’s take this humble walnut for example, previously it has been shown to support heart health and reducing colorectal cancer risk, but research shows they can do more for our health:
• 👨🔬 In a 2018 study published in the Journal of Nutrition, after eating 42g of walnuts for 3 weeks, researchers found a positive change in the faecal microbiota, there was an increase in some “good” bacteria and a decrease in “not so good” bacteria.
• Walnut consumption appeared to decrease secondary bile acids (carcinogens linked to an increased risk of colon cancer) and also showed an improvement in lipid biomarkers (meaning a decrease in “bad” LDL-cholesterol in the blood).
🎁 Bonus: Walnuts are a great source of dietary fibre, omega-3 fatty acids and Vitamin E.

Travel to Spain for their Seafood Paella!
One mouthful of a steamy bowl of paella and you'll be on a beach in Spain -- such is the power of this seafood extravaganza.
1 cup flour
3/4 cup milk
Pinch of salt
1/2 cup water
3 tbsps oil
Mix all of the ingredients together. Measure one portion of a crepe with a ladle. Spread the mixture on lightly greased and heated skillet. Fry for about 2 minutes on each side.
Smoked turkey, cut into small squares
Shredded cheddar cheese
Fill the crepe with cheese and smoked turkey, roll it. Then dip the roll into milk. After that, cover it with breadcrumbs. Fry on each side until golden and crispy.
For the cabbage lovers:
Cut the cabbage 🥬 into quarters, boil until soft. Drain and wait until cools down. Squeeze the excess water. Afterwards, chop the cabbage finely.
Heat some oil in a pan, add chopped onion. When onion becomes golden, toss in chopped cabbage. Season with salt and pepper. You can add some veg cube for extra flavour. Fry for about 15 minutes.
Repeat the same steps as for smoked turkey and cheese croquettes. .
