Creamy Garlic Herb Chicken
Quick Chicken Recipe
This is one of the best chicken recipes! It comes together so quickly and it really is just so easy to make. No marinating, no lengthy bake time, no waiting for a grill to preheat, just pan sear it in a skillet and finish it off that rich and creamy garlic herb sauce.
4 (6 oz) boneless skinless chicken breasts,
Salt and freshly ground black pepper
1 1/2 Tbsp olive oil
1 Tbsp butter
1 Tbsp minced fresh garlic (3 cloves)
2 tsp all-purpose flour
1 cup milk (anything but skim)
4 oz. cream cheese, diced into small cubes
1 tsp minced fresh thyme*
1 tsp minced fresh rosemary*
1 Tbsp minced fresh parsley (optional)
Pound chicken evenly with the flat side of a meat mallet to 1/2-inch thickness.
Heat skillet over medium-high heat then add oil.
Season both chicken with salt and pepper.
Place chicken in skillet and cook 6 - 7 minutes, or until golden brown on bottom, the flip and continue to cook until chicken breasts register 165 degrees in center, about 5 - 6 minutes longer.
Transfer chicken to a plate, tent with foil to keep warm.
Reduce burner to medium heat and melt butter in now empty skillet.
Add in garlic and saute until just lightly golden, about 20 seconds. Add in flour and cook and stir constantly until just lightly golden, about 20 seconds.
While whisking pour in milk, then add in diced cream cheese, rosemary and thyme. Season with a little salt and pepper to taste.
Cook mixture whisking constantly to melt cream cheese, and let it come to a simmer.
Return chicken to pan, spoon sauce over chicken.
Sprinkle with parsley if desired and serve immediately.

Shrimp and #avocado Salad – Fresh, easy, and filling!😍
Here’s a healthy and delicious shrimp avocado salad for two that tastes crazy good and is also paleo, Whole30, low-carb, and gluten-free. Loaded with the freshest ingredients: Avocados, cherry tomatoes, red onion, and cilantro tossed with freshly squeezed lime juice and a dash of olive oil. .
INGREDIENTS LIST FOR THE SHRIMP AVOCADO SALAD
8 oz (225g) raw shrimp, peeled and deveined
1 large avocado, diced
1 handful cherry tomatoes, diced
1/2 red onion, minced
Freshly chopped cilantro (or parsley)
2 tablespoons salted butter, melted
1 tablespoon lemon juice
1 tablespoon olive oil
Salt and fresh cracked pepper
1. Toss shrimp with melted butter in a bowl until well-coated.
2. Heat a skillet over medium-high heat. Add shrimp to the skillet in a single layer, searing for a minute or until it starts to become pink around the edges, then flip and cook until shrimp are cooked through, less than a minute.
3. Transfer shrimp to a shallow plate and allow to cool while you prepare the other ingredients.
4. Add all other ingredients (avocado, tomato, red onion, and cilantro) to a large mixing bowl. drizzle with olive oil and lime juice and toss to mix everything together.
5. Add shrimp and give a quick stir to mix together. Season with more salt and pepper, to taste. Enjoy! .

How to cook the most luscious, crispy-skinned salmon? 😍
👉🏼 Splash some ghee or coconut oil in a cold #castiron skillet, add the salmon pieces (skin side down), and turn heat on medium-high. Dust with salt and freshly-cracked black pepper.
👉🏼 Don’t fuss with the fish as it cooks, leave it until the sides are almost opaque, then flip and marvel at the crispness of the skin.
👉🏼 Cook on the other side until the sides are totally opaque. Turn off the heat and let the salmon stop sizzling.
👉🏼 Pair with baby kale, spouts, avocado, and roasted romanesco.

I had 2 of the fried chicken breasts with @porkkinggood Crumbs, left from that recipe, and used them in this. I always make more than needed, so that I can re-invent leftovers. (Saves time & is pretty genius)
I haven't made this recipe in years, and now this is making its way back into rotation. This is a must try, especially on busy work nights. Do yourself a favor and get on this!
2 chicken breasts, cooked using the same technique as in the Gorgonzola Marsala Cream Sauce dish, (from a few posts back).
8 oz package(s) sliced fresh mushrooms
2 tablespoon(s) butter melted
3/4 cup(s) marsala
1/2 cup(s) chicken broth
1/2 tsp. sea salt
1/8 tsp. Freshly ground black pepper
1/2 c. shredded mozarella cheese
1/2 c. Shredded parmesan cheese
2 green onions chopped
In an 8x8 baking dish, coat with butter or spray, and place cooked chicken breasts side by side.
Sauté mushrooms in butter in a large nonstick skillet over medium-high heat, stirring constantly, 3 to 5 minutes or just until tender.
Pour mushrooms evenly over chicken.
Add wine and broth back to same skillet. Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes, stirring occasionally. Stir in sea salt and black pepper. Pour sauce over chicken. Combine cheeses and green onions; sprinkle over chicken.
Bake uncovered, at 450 degrees for 12 to 14 minutes until cheese melts.
*This is another one I adapted from the Internet that I copied and pasted years ago, so I have no idea who originally made it. I Ketofied this, and tripled the amount of sauce per serving. Yum!

How I made these👇🏻
➡️For the sweet potato base, combine:
-1 1/2 cups of sweet potato mash -1/4 c melted coconut oil
-1 flax egg (sub regular egg, if desired)
-2 tbsp unsweetened Almond/coconut milk
-1 tsp pure vanilla extract
-1/4 c @mynaturalforce collagen peptides
(Sub unflavored protein of choice to make it vegan!)
-1/2 c coconut sugar
-1/2 c @bobsredmill almond flour (you could sub 1/4 c coconut flour)
-1/2 tsp baking soda -1/4 tsp @celticseasalt pink salt
➡️For the topping, combine separately:👇🏻
-1/3 c melted coconut oil -1/4 c coconut sugar
-1/4 c almond flour (sub 2 tbsp coconut flour)
-1 tbsp @simplyorganicfoods cinnamon
-pinch of pink salt
➡️Transfer sweet potato mixture into a lined 8x8 pan.
➡️Drop dollops of cinnamon mixture on top of sweet potato mixture and slightly spread out swirl on top.
➡️Bake at 350 degrees for 35 minutes.
➡️Give them plenty of time to set up (I know, it’s hard, but I promise it’s worth it!) TIP: place in the fridge or freezer for 15-20 minutes to speed things up! 😋)

i got all caught up in the @steelers win over the @patriots (my least favorite NFL team👎🏼) last night that i forgot to share THE WORLDS BEST PLANT-BASED MAC + CHEESE that i whipped up for this week’s #footballeats 🏈 🏆 using @eatbanza chickpea noodles for added protein, i had this recipe brewing in my mind ever since i tried this super creamy tapioca starch mac + cheese at @cinnamonsnail in NYC! i think i can say this was a successful recreation...but you’ll just have to try it for yourself and see 👅
1 box @eatbanza chickpea noodles
3/4 cup coconut milk
3 tbsp @bobsredmill nutritional yeast
2 tbsp @bobsredmill tapioca flour
1/2 tsp sea salt
1/2 tsp @traderjoes onion salt
1/2 tsp garlic powder
simply place all ingredients in a saucepan over medium heat and stir continuously with a whisk until it begins to boil. reduce the heat to low and let simmer for a minute until the sauce becomes stretchy. pour over your cooked @eatbanza noodles and FEAST 👩🏼🍳

In my efforts to become a healthy, quick & easy Meal Prepper Extraordinaire, I’m having a love affair with my Instant Pot. *While it’s true that I may have arrived late to this Instant Pot party, I’m here now, baby! 🎉 So far I’ve made breakfasts, lunches, dinners and everything in between, even protein bars! If you have an instant pot on your Christmas wish list or dormant in your cupboard, stay tuned for some of my IP favourites! In the meantime, here are the pics from my story on avocado sweet potato toast (made in the toaster, not the instant pot - another healthy, quick & easy meal prep tip!) 🍠💕 1. Carefully cut a raw sweet potato into 1/4” rounds or slices 2. Turn your toaster all the way up. 3. Pop in your slices for 2 full rounds, maybe 3 (my toaster goes up to 6 and I usually do 3 rounds for a 1/4” slice, rotating the direction of the slices each round in the toaster) 4. While your sweet potato is toasting, prep your topping. Mashed avocado with a little olive oil, sea salt and pepper is delicious. Not going to lie, I’ve also done peanut butter and jam on sweet potato toast too. Strawberry chia jam that I made in the instant pot! 😄 Is this something you’ve tried before? In desperate need of a grocery shop, but at least we‘ve got paleo CHOCOLATE-DIPPED SHORTBREADS. I experimented with yacon syrup to sweeten these and all I can say is yassssss (*they’re also family Christmas dinner approved). .
What the heck yacon, right?! It’s actually a “tuber” (have I lost you yet?!), a root vegetable similar in texture to a water chestnut, that contains essential amino acids, antioxidants and a ton of other nutrients. In its glorious molassesey form, yacon is sweet tasting BUT is low-glycemic, so it’ll keep your blood sugar steady vs spiking. It’s also a PREbiotic and can help grow dat good gut bacteria. So, these guys are a win win win win, really. Here’s how I made ’em👇🏼
2c almond flour
1/4c tapioca flour
1/2c melted & cooled coconut oil (or ghee for a buttery taste)
1/4c yacon syrup
1/2 tsp sea salt (use a bit for topping)
Preheat oven to 350. Mix all of the dry ingredients in a bowl, followed by the wet ingredients. Once fully mixed, roll into a ball and set in fridge for 20-30 minutes. Then, take out and use rolling pin (or wine bottle...) to roll flat between two pieces of parchment. Peel off paper and use cookie cutter to stamp out shapes. Transfer onto baking sheet and pop in oven for 12ish minutes. Let cool completely before dipping in the dreamy chocolate. .
Chocolate dip 🍫
1 bar melted 89-100% dark chocolate
2 tbsp monk fruit
Optional: a tiiiiny splash of peppermint extract if you’re feeling festive 🎄
Melt in a sauce pan over low/med heat. Once melted, dip 1/2 the cookie in and set onto parchment. Once all are dipped, transfer to freezer for 20 minutes or so. Store in the fridge, otherwise they’ll get melty on ya. ENJOY!

1.5 cups riced cauliflower
1/2 cup red bell pepper
1/2 cup yellow bell pepper
1/2 cup carrot
1/2 cup aubergine / eggplant
1/2 cup courgette / zucchini
2 garlic cloves
2 tbsp spring onion / scallion
1 tsp cumin seeds
1 tsp coriander Seeds
1/2 tsp ground ginger
Splash of coconut aminos
salt to taste
Wild Rocket / Arugula
Smoked wild salmon

Who said home cooked meals are not just as easy?
A convenience store is a store trying to be convenient.
One’s convenience is when they find something easier to do.
The home cooked meal on the right was convenient due to the following factors which I create in my lifestyle.
• Plan my food shopping ahead with a rough menu or ingredients i crave / want.
• Have a selection of cooking appliances at home which make life easy.
• Creating a few staple recipes which I can follow and slightly adjust with spices, herbs, protein source.
The home cooked curry was cooked in a slow cooker, I threw spices, chicken, tomato passata and bone broth in the morning, returning to a cooked meal with only grating and sautéing cauliflower to create ‘rice’.
The home cooked meal is also cheaper. Also, able to have leftovers for the following day.
The ready made meal would probably take more time, going out, parking, paying and then throwing it in a microwave. Plus it’s also cooked in a plastic package which we know is harmful for health 🚫
How often do we end up by needless food items or food like substances when in supermarkets or shops. That’s how they make money and where they invest heavily into increasing the chances with strategies such as a bakery smell at entrance, placing fruit and veg at the front to give impression its fresh? “Right?”, placements on the shelves, plinths on end with sales or promotions, meal deals etc etc.
I do not avoid supermarkets. They serve a purpose for sure, but I make the majority of my food organic and sustainable.

@wellshire bacon is paleo approved, no added sugar which is hard to come by when buying bacon! .
And generally I just love having salad in the morning, starts the day off with greens. .
