That Deceptively Simple Indian "Happy Meal" - Done
Mid January marks the harvest season in India. Every region has It's own traditions. What's common is the sense of celebration, letting go of negativity & the labour of love involved in making the meal. This is the combination I like to have whilst I'm bundled up in a phulkari shawl
1. That Hearty Khichadi
I soaked rice, channa dal/skinless split bengalgram, Sabut moong/mungbeans & fresh peas in water for 30 minutes
I tempered ghee in a pressure cooker with whole garam masala, cumin seeds, mustard seeds, lots of sesame seeds, green chillies, dried red chilli, onions & asafoetida. I added in the drained rice mixture & fresh coriander, dried fenugreek leaves, salt & just enough water to cover & pressure cooked for 2 whistles
2. Those Sukhe Aloo /Dry Potatoes
I boiled potatoes in salted water along with asafoetida & turmeric powder
I tempered ghee with cumin seeds, curry leaves, asafoetida & red chilli powder. I added in the boiled potatoes, tomatoes, fresh coriander & tossed
3. That Carrot Salad
I grated winter carrots & mixed with freshly scraped coconut, fresh coriander & salt
I tempered oil with mustard seeds, curry leaves & asafoetida & mixed into the salad
4. That Obligatory Salad : Cucumber & lime
5. That Gajak/praline for @ravindradiddee - because papa loves it
I used equal quantities of sesame seeds & jaggery
I roasted sesame seeds till light brown
I melted jaggery on a medium flame & when it frothed, I added 2 tbspns of ghee, stirring constantly till the jaggery became lighter to handle (drop a little hot jaggery in water & if it cracks when you try to mould it - THAT's the perfect consistency. Immediately add the toasted sesame & mix fast (it thickens VERY fast). Pour the mixture onto a ghee greased butter paper, knead & repeadly roll out before finally rolling out to an even thickness
Cut into small pieces immediately & let it cool
Even though this photo makes everything look deceptively easy, believe me it wasn't. I got my years worth of upper body cardio whilst making the sweet & I needed the rest of the food to recover till the next harvest season🤦♀️stories credit @beingbengt
I prepped at the weekend and Tuesday night was risotto.. ta dah!
Feeling green - risotto rice simmered with gradually added chicken stock (using stock pots) threw in two bags or spinach, two bags of broccoli🥦 and a bag of fresh beans and some pre cooked left over chicken🐓. Stretching my left overs!
Added some garlic and parsley to finish and a pot of quark to create a creamy texture! Sprinkling of low fat grated cheese (heA) of course 🧀 there you have it 0 syns and plenty for everyone’s lunch tomorrow👍🏼

Veggie pot pies! But with cornbread on top! This is comfort food at its winter finest. 😍 The filling for these is quick and simple, and you can use store bought mix for the cornbread. (I like @traderjoes mix!) These are perfect for busy weeknights!

Here’s what I have planned for dinner tonight-Chicken Pesto Sandwiches...you know the kind-the kind you’re always drooling for at places like Panera. 😋 Except, I can make enough for my whole family for cheaper than one sandwich at a shop! Here are some of my secrets:
1. I buy Pesto from @costco and freeze it in smaller portions to use in occasions like this. (Check out my story to see how it’s done)
2. I always watch for ciabatta anything bread in the day old sections of my grocery stores. I make these enough that I grab it when I see it, and if needed, freeze the bread until I’m ready to use it.
3. Stock up on provolone cheese when it’s on sale. (Anyone else have cheese slices on sale recently?) I don’t freeze cheese slices because it makes them do weird things. But, if you look at the package you’ll notice the sell-by date is usually a few months out, so I just keep it in my fridge.
4. Stock up on chicken when it’s on sale. (Holy cow! 🐄 I just got boneless, skinless chicken for $0.99/lb @safeway ) I usually slice them lengthwise so they are thinner, and so I can get more out of them without the waste! 🙌🏻

I jazzed up my quinoa bowl! This time, I kept the same base (quinoa, tomatoes and sesame purple broccoli), added almonds and ginger to the broccoli and I grilled the tomatoes and topped them with crispy garlic and Chilli. 😍😍
After moving and starting a new job back in the Midwest, it’s time I get back on my Instagram game! I am going to be posting a lot of new content on here and I’m really excited to share my food journey and all that 2019 has in store! Adjusting to my new work schedule I’ve been trying to find quick meals for long days at the hospital. This @eatbanza pasta bowl is my new go to! Great way to get in my carbohydrates and protein all in one dish. Added some @traderjoes vegan pesto for flavoring. 10/10 would recommend the pesto, it is amazing!
