I normally like to take these to around 135f before a sear but these were closer to 125-130f then a stinking hot sear over charcoal for that crust. Kangaroo with its sweet gamey flavour picks up smoke flavours so well, gives it a real outback bushfire taste that i love!๐Ÿ˜š๐Ÿ‘Œ You can see how lean this meat really is. Dont overcook it!

Carrots go everywhere salads, soup, stock, desserts etc. It could be young ones roasted with honey or finely grated into the cake. There are plenty ways to cook them. I like to grow carrots of different colors too. I often go to the kitchen during the service and grab a carrot watch everyone work.
